We need to Avoid food that contain artificial sweeteners, foods that contain high amounts of sugar, saturated fat or caffeine.

Processed foods like deli meat have been linked to triggering ADHD symptoms in children. Instead choose foods that contain antioxidants, choline, omega-3 fatty acids, and complex carbohydrates that boost brain health.

Fruits & nuts for snacks

To add Protein to a healthy diet :

beans, almonds, walnuts, Brazil nuts, multi grain cereal. Eggs, milk, goat cheese, and Greek yogurt.

Fish for omega 3 & fatty acid

Salmon, mackerel, fresh tuna, trout, sardines, herring.

Making tuna wraps, sandwiches and pasta salads for kids lunches is a great way to add good fat to their diet.

For salads, sandwiches, and wraps use Green leafy vegetables like spinach and kale. These greens are full of folate and vitamins .

Our family loves pasta. But to keep in mind a balance healthy diet once or twice a week we combine it with other meat or fish dishes.

Orzo with red bell pepper & cauliflower with eggs. Serve it warm or cold. We made a simple balsamic olive oil and black olive dressing to go with our orzo, and Parmesan cheese. You can use mozzarella or other favorite cheeses.

 

It is simple and delicious, and it really is a great meal that tastes better as leftovers. We served it with chicken, but you can have it as is as a vegetarian meal.

Ingredients:

orzo, diced red pepper, diced onions, diced black olives.

cauliflower with eggs sautéed.

 

 

 

Crumpets are yummy

Happened to watch Bobby Flay making crumpets for brunch & we had to try it.

Hoping to have them ready for breakfast had to rush through the mixing but needed to let the dough sit for an hour. Before that added more flour to the mix since ours looked too watery & didn’t quite look like a smooth dough.

We let them cool before hvg them with butter & honey & served a couple after dinner toasted with cherry jam, butter & peanut butter.

Warm crumpets are delicious. We cut them in triangles & had them with salad & soup for lunch.

Cooking for our family while on vacation

We are vacationing in a beach house and are planning on eating in at least a few breakfasts & a few dinners.

Sometimes getting everyone ready after a day on the beach is exhausting.

Staying in means eating with swim suits on and wet hair; everyone lounging around the porch.

Since we drove we brought a few things from home:

Organic olive oil

White rice

Organic pasta

Italian tuna

Frozen butter

Easy delicious peach cobbler

We love peaches, and baking a peach cobbler is one of the delicious ways to eat them. Peaches are high in fiber, and antioxidants. Peaches might help fight diabetes and cardiovascular disease.

We used this easy recipe with the help of our young chef who loves to cook when it is too hot to play outside.

4 cups of sliced peaches
1 c sugar
2 tsp cornstarch
1 tsp vanilla extract
place all in a bowl
On top of the crust:
1  pkg refrigerated organic Pie crust
1/4 c sugar
2 tsp cinnamon 
1/8 tsp nutmeg
3/4 stick butter sliced 
bake at 400°

On the beach, by the pool, the car trip they all call for snack time.

Watermelon

Great way to stop your thirst & served with chunks of feta cheese replenishes the salt you need. Easy to transport cold or room temperature still good to eat.

Fruit & veggie bowl with cheese

grapes, pineapple, cantaloupe, bell peppers, cherry tomatoes, cucumbers mixed with chunks of favorite cheese. Mozzarella sticks or cheddar cubes work well together.

Hummus, yogurt  with veggies

hummus with water-rich veggies like baby carrots, celery sticks or sugar snap peas.

Peanut butter & jelly

with bread or whole wheat crackers, easy to pack & store since you don’t need to worry too much about keeping them cool.

Add this delicious small fruit to your trail mix. You can buy them easily On line anywhere. This small sweet delicious fruit is not very well know for its nutritional value, since the fresh fruit itself is almost impossible to buy fully ripped. But don’t give up on it’s delicious special sweetness. Keep them in a glass jar on your kitchen counter, and add it to your salad, yogurt, or just enjoy it with your morning coffee.
