Finding Solace in Food๐Ÿ˜‹

Cooking and baking has become a necessity now that we all take comfort and safety in staying home. Watching cooking shows has been the most entertaining and age appropriate tv time for my entire family, and has been an easy way for me learn a few new recipes.

If you have children at home you will relate to my hectic 3 meals a daily schedule. During the week lunch hour changes by the online school schedule, and only on weekends we all enjoy a more relaxed menu around the kitchen table.

Food brings us together, and sitting together for a meal for me has always been comforting, and I do confess my family is not fussy or limited by food allergies, so I have less stress preparing meals.

Since quarantine I have used my pasta maker 3 times, for spinach and ricotta ravioli, and fettuccini. Baked tart shells that everyone filled w their favorite fruits, and grilled chicken and burgers just to give myself a menagerie of recipes to prepare for our meals.

We are all doing our best during the quarantine to keep it together, and I will remember this experience as the time I challenged my family to enjoy my cooking without ketchup.๐Ÿคฃ

I was surprised to hear that nurseries are running out of tomato plants!? Personally I never had good luck planting them, but I guess with shopping dilemmas and food & vegetables some what been scarce, for some people growing their own food made sense. Or is this just a beginning of a trend?

Creating a garden, is not an easy task. It is extremely time consuming, and expensive. To create a garden and keep it beautiful, and healthy is a daily chore, but a chore that is delightful, gratifying, and heavenly.

I have had vegetable gardens, herb gardens, and flower gardens. Had to make peace with squirrels, bunnies, birds, and yes even lizards, that enjoyed leaving bit marks on tomatoes that were half ripped.

In mid summer when plants are well established and are in full bloom is when I sit back and enjoy as they say the fruit of my labor. But for now, I put on my gardening gloves and start my mornings with pulling weeds, watering and filling the holes that squirrels have left behind.

Gardens don’t just add color to our yards, or food to our tables, they make our homes a haven for birds, bees, and butterflies. They come to our gardens to find food and they pollinate our trees and flowers.

If you are a first time gardener, you will be a gardener for life.

Giving up to sweatpants !๐Ÿคฃ

Staying home hasn’t been that stressful, what is stressful for me is keeping my family happy, healthy, focus on school work, and following a workout schedule.

Since quarantine started, we have also let go of our many daily routines. Getting up at a certain time, shaving, wearing makeup, putting on clothes, socks, grabbing our to go coffee mug.

To stay happy surrounded by our children and whoever we had to be quarantine with is more work than we are used to.

We are realizing now that Cleaning, cooking, entertaining, educating, is more work and planning than we have ever done in the past and is simply exhausting, but also very necessary.

For me making a large bowl of pasta, baking double chocolate brownies, gardening, going on long walks, watching a movie, wearing sweatpants all day long is what I need to do to stay, stress free, hopeful and happy surrounded with family. What I see for now as simply necessary.

Spring is here๐ŸŒท

Most of us are having a difficult time leaving our homes to see the arrival of this early spring season.

In the south where cherry blossoms have their own festival, trees have quietly bloomed and have not been fazed with the current state of time.

A One of a Kind Farmers Market

With unique ingredients and organic recipes, the Santa Fe farmers market is one of the most famous markets in the Southwest.

We start by strolling through the beautiful market’s pastry and bread vendors, enjoying the natural colors of hand died yarns. The fragrance of lavender hand made soaps and moisturizers is very present.

Take a large shopping bag with you because you won’t go home empty handed.

Fall never looked better

I love long walks with or without my music playing in my ears. Walking with my family is a different walk, since I tend to walk slower and usually get engage in some kind of conversation.

This year I have paid More attention to my surroundings. I am guessing with dozens of new constructions I am more aware that the green land around where we live and walk is starting to shrink. My green and hilly views are turning into constructions sites, that are growing in number every month. How many mixed used structures do we need? This tends to be the trend in our city!!

My pictures of fall trees are beginning to mean more than capturing the foliage this year. I find myself thinking this year might me the last year I am at aww of their beauty and sense of forever strength.

I hope I am wrong, but for now I am taking as many pictures as I can. To remember how beautiful natures is, and how much we all need to be surrounded by its beauty.

Healthy, Delicious & fast

It is time to eat, and  it is not just you starving but your loved ones are looking at you as if you had already planned the next meal and are ready to present them with a new and delicious spread that will please everyoneโ€™s taste buds.

I experience this more than a few times a week and since I constantly preach healthy eating, I can not bring myself to frozen meals or ordering in. So my weapon of pleasing is preparing salads with everyoneโ€™s favorite ingredients.

Salads served hot or cold With or without meat with loads of everyoneโ€™s favorite veggies, fruits ( dried or fresh) nuts, and simple dressings like olive oil with lemon and salt, oil and vinegar.

To keep my salads exciting I often use left over salmon, chicken or beef. For vegetables & fruits : beets, turnips, celery, mango, pomegranate seeds to give it an exotic twist.

Last nights dinner was salad served hot with chicken, farfalle Pasta, corn, peas, broccoli, asparagus, mozzarella chunks drizzled with glazed vinger, salted sunflower seeds, wild rice with a good sprinkle of Parmesan cheese. It was a winner and the leftovers will be great too.

Honeydew smoothie

So a perfect time for a cold sweet smoothie. We usually make one when we buy a honeydew that is not sweet or just not flavorful, but this one was sweet as honey, so no need for honey or maple syrup.

Not only tart cherries are beautiful, and great in a pie, they are also a great drink to have before a workout. Drinking the juice twice a day for at least seven days before a big race or event can help to ease the pain, and shortens the recovery time.
